  1. Cream together margarine, butter and cream cheese in a large bowl until smooth and combined.
  2. Add 2 eggs, 1 cup flour and 1 cup sugar; mix well.
  3. Repeat the addition of eggs, flour, and sugar in three more batches until all ingredients are fully incorporated.
  4. Add vanilla and lemon extracts and mix well until just combined.
  5. Place the thick batter into a greased and floured bundt pan.
  6. Bake at 300°F - 325°F for 1 hour 15 minutes, or until a toothpick inserted in the center comes out clean.

Note

The batter will be very thick. Use a soup ladle or large spoon to help transfer it to the bundt pan.

For a stronger citrus flavor, increase the vanilla and lemon extracts to at least 1/4 teaspoon each.

Baking time may vary. If your oven runs hot, keep the temperature at 300°F throughout the baking process. You may need to add an extra 15 minutes to the bake time.
