Description

This elegant dessert captures the essence of traditional Turkish delight with a refreshing citrus twist. The combination of orange, lemon, and lime creates a vibrant, tangy flavor profile that is perfectly balanced by the sweetness of sugar and red currant jelly. The texture is smooth and jiggly, setting firmly enough to be cut into neat, dusted squares. It’s a sophisticated treat that feels light yet satisfying, making it an ideal addition to afternoon tea, dessert platters, or as a unique gift. The green food coloring adds a playful visual element, reminiscent of pistachio flavors, while the icing sugar coating prevents sticking and adds a subtle sweetness. Perfect for impressing guests or enjoying a moment of culinary indulgence at home.

Ingredients

Directions

  1. In a saucepan, combine 1/2 cup cold water, 1 cup sugar, and the grated rinds of one orange and one lemon.
  2. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves.
  3. Once boiling, add the 2 tablespoons of gelatin dissolved in a little warm water.
  4. Reduce heat and simmer gently for 15 minutes.
  5. Remove the saucepan from heat.
  6. Stir in 2 tablespoons red currant jelly, 3 tablespoons strained orange juice, 3 tablespoons strained lemon juice, and 3 tablespoons strained lime juice.
  7. Add a few drops of green food coloring and stir until well combined.
  8. Lightly wet a shallow, square tin with water.
  9. Pour the mixture into the prepared tin.
  10. Chill in the refrigerator until the mixture is set and firm.
  11. Once set, cut the jelly into small squares using a knife dipped in hot water for clean cuts.
  12. Toss the squares in sifted icing sugar until lightly coated.
  13. Serve immediately or store in an airtight container.

Note

Ensure the tin is wet to prevent sticking.

Dip the knife in hot water between cuts for clean edges.

Store in an airtight container at room temperature for up to 2 days, or refrigerate for longer storage.

Adjust food coloring to achieve desired shade of green.

For a stronger citrus flavor, use fresh juices only.
