Description

These truffles are a delicate dance of flavors and textures, perfect for sophisticated gatherings or intimate treats. The base is a rich, creamy white chocolate ganache that melts instantly on the tongue. Inside, you'll find bursts of chewy, sun-dried apricots providing a tart contrast to the sweetness, while finely chopped toasted hazelnuts add a crucial nutty crunch. The outer shell is dipped in smooth white chocolate and sprinkled with more hazelnuts for visual appeal and texture. They are elegant enough for a holiday dessert table yet simple enough for a weekend baking project. Pair them with a cup of strong black coffee or a glass of dessert wine to balance the richness.

Ingredients

Directions

  1. Preheat oven to 350°F. Spread hazelnuts on a baking sheet and bake for 10 minutes, or until light brown and skins are cracked.
  2. Remove from oven. Wrap nuts in a clean terry-cloth towel and rub vigorously to remove as many skins as possible.
  3. Finely chop the toasted hazelnuts in a food processor or using a knife. Set aside.
  4. In a heatproof bowl or glass container, combine 12 ounces of the chopped white chocolate and 6 tablespoons of heavy cream.
  5. Microwave on medium power (70%) for 3 to 4 minutes, stirring twice during heating, until the chocolate is melted and smooth. Alternatively, melt over a double boiler.
  6. Stir in 3/4 cup of the chopped hazelnuts and the 1/4 cup of chopped dried apricots until evenly distributed.
  7. Cover the mixture and refrigerate for 1 to 2 hours, or until firm enough to hold its shape but still soft enough to roll.
  8. Scoop or roll the chilled mixture into 28 smooth balls, approximately 1 1/4 inches in diameter. Place them on a wax paper-lined cookie sheet.
  9. Refrigerate the formed truffles for at least 1 hour, until firm.
  10. In a small glass dish, melt the remaining 12 ounces of white chocolate using the same method as before (microwave or double boiler), until smooth and warm.
  11. Working quickly, dip each chilled truffle into the melted chocolate, ensuring it is fully coated. Use a fork to lift the truffle out and tap gently to remove excess chocolate.
  12. Place the dipped truffles back on the wax paper-lined sheet. Immediately sprinkle with the remaining chopped hazelnuts before the chocolate sets.
  13. Allow truffles to set at room temperature or refrigerate briefly until the coating is hard. Store in an airtight container in the refrigerator for up to 2 weeks.

Note

Variation: Use 12 ounces of semisweet chocolate instead of white chocolate for the ganache base, or split the chocolate base between white and semisweet to create two different flavors.

If the ganache mixture becomes too hard to shape after refrigeration, let it stand at room temperature for 30 minutes until it is firm but pliable.

For best results, use high-quality imported white chocolate. Standard chocolate chips may contain stabilizers that prevent a smooth melt.

When dipping, ensure your hands and tools are dry, as water can cause the chocolate to seize.
