  2. Heat the double cream in a saucepan until it just begins to boil.

  5. Pour in the whisky and stir thoroughly until fully incorporated into the ganache.
  6. Transfer the mixture to a metal bowl (or keep in the saucepan) and place it over a bowl of iced water.
  7. Beat the mixture continuously with a wooden spoon until it cools down and thickens enough to hold its shape.
  8. Spoon the thickened ganache into a piping bag fitted with a plain tip, or use two spoons to portion it.
  9. Drop small portions onto a sheet of greasproof paper, spacing them apart.
  10. Place the tray in the refrigerator for about 30-45 minutes, or in the freezer for 20 minutes, until firm but not hard.
  11. Remove the truffle centers and gently roll them between your palms to form smooth balls. If they become too sticky, chill them again briefly.

Note

Use a high-quality chocolate with a cocoa content of at least 70% for the best flavor.
