Directions
-
Cut the lamb into neat, bite-sized pieces and season generously with pepper and salt. If using lamb kidneys, trim and chop them finely.
-
In a heavy casserole dish, layer the meat with sliced carrots, turnip, and onions. Season each layer lightly.
-
Top the meat and vegetables with a layer of thinly sliced potatoes, overlapping them like shingles to cover the surface completely.
-
Pour in enough water or stock to come about one-third of the way up the sides of the casserole. Dot the top of the potatoes with small pieces of dripping or butter.
-
Cover the casserole and place in a preheated oven at 300°F (150°C) for about 2.5 hours.
-
Remove the lid, increase the oven temperature to 350°F (175°C), and bake for another 30 minutes until the potato topping is golden brown and crisp.
Note
Storage: Leftovers keep well in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
Substitutions: You can substitute beef chuck for lamb if preferred. Leeks can be used instead of onions for a milder flavor.
Tips: Ensure the potato slices are thin and uniform for even cooking and a better crust.
