Description

This traditional British favorite is the ultimate comfort food, featuring tender chunks of lamb braised slowly with root vegetables until meltingly soft. The magic lies in the topping: layers of thinly sliced potatoes that bake into a golden, crispy crust while sealing in the savory juices below. Rich with flavor from lamb drippings, onions, and carrots, this dish offers a rustic, hearty texture that warms the soul. It is perfect for chilly evenings, Sunday family dinners, or when you crave a no-fuss meal that tastes like it has been cooking for hours. Serve with crusty bread to soak up the delicious gravy.

Ingredients

Directions

  1. Cut the lamb into neat, bite-sized pieces and season generously with pepper and salt. If using lamb kidneys, trim and chop them finely.
  2. In a heavy casserole dish, layer the meat with sliced carrots, turnip, and onions. Season each layer lightly.
  3. Top the meat and vegetables with a layer of thinly sliced potatoes, overlapping them like shingles to cover the surface completely.
  4. Pour in enough water or stock to come about one-third of the way up the sides of the casserole. Dot the top of the potatoes with small pieces of dripping or butter.
  5. Cover the casserole and place in a preheated oven at 300°F (150°C) for about 2.5 hours.
  6. Remove the lid, increase the oven temperature to 350°F (175°C), and bake for another 30 minutes until the potato topping is golden brown and crisp.

Note

Storage: Leftovers keep well in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.

Substitutions: You can substitute beef chuck for lamb if preferred. Leeks can be used instead of onions for a milder flavor.

Tips: Ensure the potato slices are thin and uniform for even cooking and a better crust.
