Ingredients

Directions

  1. Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin tin with paper liners.
  2. Place one vanilla wafer flat at the bottom of each lined muffin cup.
  3. In a large mixing bowl, beat the softened cream cheese on medium speed until it is smooth and fluffy.
  4. Add the sugar to the cream cheese and beat until well combined.
  5. Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated before adding the next.
  6. Stir in the vanilla extract until evenly distributed throughout the mixture.
  7. Spoon the cream cheese mixture evenly over the vanilla wafers in each muffin cup, filling them almost to the top.
  8. Bake for 20 minutes, or until the centers are just set but still slightly jiggly.
  9. Remove from the oven and let cool in the pan for 10 minutes.
  10. Spoon approximately one tablespoon of blueberry pie filling onto the center of each cooled cheesecake.
  11. Transfer the muffin tin to the refrigerator and chill overnight to allow the cheesecakes to fully set.
  12. Remove from the liners and serve chilled.

Note

Storage: Keep covered in the refrigerator for up to 3 days.

Variations: You can use any flavor of pie filling or fresh berries for the topping.

Tips: Light cream cheese works well if you prefer a slightly less rich texture, but full-fat is recommended for the best flavor.
