  1. Beat the egg yolks and sugar in the top of a double boiler over gently simmering water until the mixture begins to thicken and turns ivory colored. This creates the zabaglione.
  2. Add 1/3 cup of the Marsala or brandy to the zabaglione and whisk continuously over the heat. Remove from heat and let cool completely.
  3. In a separate bowl, beat the single egg white until stiff peaks form.
  4. Gently fold the stiff egg white into the cooled zabaglione mixture.
  5. In another bowl, stir the strong espresso coffee into the room temperature mascarpone cheese until smooth.
  6. Whip the cream to soft peaks.
  7. Combine the remaining Marsala or brandy in a shallow dish for dipping.
  8. Quickly dip the ladyfingers into the remaining liquor and arrange them in a single layer in the bottom of a 9-inch serving bowl.
  9. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the zabaglione mixture, and then half of the whipped cream.
  10. Repeat the layering: another layer of dipped ladyfingers, the remaining mascarpone, zabaglione, and finish with the remaining whipped cream.
  11. Refrigerate for several hours, preferably overnight, to allow the flavors to meld and the dessert to set before serving.

Note

Storage: Tiramisu must be kept refrigerated. It is best consumed within 2-3 days.

Substitutions: If you prefer a non-alcoholic version, you can omit the Marsala/brandy and use additional strong coffee or a splash of vanilla extract for the dipping liquid and zabaglione.

Tips: Ensure the mascarpone is at room temperature before mixing to avoid lumps. Do not over-soak the ladyfingers, or the dessert will become too wet.
