Beat the egg yolks and sugar in the top of a double boiler over gently simmering water until the mixture begins to thicken and turns ivory colored. This creates the zabaglione.

Add 1/3 cup of the Marsala or brandy to the zabaglione and whisk continuously over the heat. Remove from heat and let cool completely.

In a separate bowl, beat the single egg white until stiff peaks form.

Gently fold the stiff egg white into the cooled zabaglione mixture.

In another bowl, stir the strong espresso coffee into the room temperature mascarpone cheese until smooth.

Combine the remaining Marsala or brandy in a shallow dish for dipping.

Quickly dip the ladyfingers into the remaining liquor and arrange them in a single layer in the bottom of a 9-inch serving bowl.
