Combine egg yolks and sugar in the top of a double boiler. Beat at medium speed with an electric mixer until thick and lemon-colored.

Bring water to a boil in the bottom of the double boiler, then reduce heat to low. Cook the egg mixture for 8-10 minutes, stirring constantly, until thickened.

Remove the bowl from the heat. Add mascarpone cheese and beat until the mixture is completely smooth.

In a separate medium bowl, beat whipping cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture.

In a small bowl, combine water, instant coffee granules, and brandy. Stir until coffee is dissolved.

Quickly dip the cut sides of the ladyfingers into the coffee mixture. Do not soak too long to avoid sogginess.

Line the sides and bottom of a trifle bowl or 3-quart soufflé dish with 36 ladyfingers.

Pour half of the mascarpone filling over the ladyfingers. Layer the remaining ladyfingers on top of the filling.

Pipe remaining filling over the top layer of ladyfingers. Cover and chill in the refrigerator for at least 8 hours.

Note
For food safety, you can use pasteurized eggs or heat the egg yolk mixture to 160°F (71°C) while whisking constantly.
