  1. Wear rubber gloves to protect your hands from the intense capsaicin. In a blender, carefully puree the sorano chilies, red chilies, jalapenos, white wine, vinegar, cayenne pepper, salt, and pepper until smooth.
  2. Place the chicken wings in a large bowl or container. Pour the puree over the wings, ensuring they are fully coated. Cover tightly and refrigerate for 5 days to marinate.
  3. Preheat your oven broiler. Remove the wings from the marinade, letting excess drip off. Place wings on a broiler pan.
  4. Broil the wings for approximately 15 minutes, turning occasionally, until cooked through and slightly charred.
  5. While wings broil, combine the remaining marinade, Tabasco sauce, Worcestershire sauce, Durkee red-hot sauce, and sugar in a saucepan. Bring to a boil and reduce until thickened.
  6. Remove wings from the oven. Brush generously with the hot sauce mixture. Return to the broiler for 5 more minutes to glaze.
  7. Serve immediately with plenty of ice water and soda water on the side.
