Wear rubber gloves to protect your hands from the intense capsaicin. In a blender, carefully puree the sorano chilies, red chilies, jalapenos, white wine, vinegar, cayenne pepper, salt, and pepper until smooth.

Place the chicken wings in a large bowl or container. Pour the puree over the wings, ensuring they are fully coated. Cover tightly and refrigerate for 5 days to marinate.

Preheat your oven broiler. Remove the wings from the marinade, letting excess drip off. Place wings on a broiler pan.
