Peel and chop the shallot finely. Wash the morels carefully and cut them into quarters. If using dried morels, soak them in water for at least 30 minutes before this step.

Trim the tough ends off the asparagus spears. Cut the tips off 8 spears and set them aside for garnish. Chop the remaining asparagus stalks.

Heat half of the butter in a saucepan. Add two-thirds of the chopped shallot and the chopped asparagus stalks. Cook gently until softened.

Add enough water to cover the vegetables and bring to a boil. Cook until the asparagus is tender. Reserve some of the cooking liquid.

Drain the asparagus, reserving the cooking liquid. Transfer the asparagus and some of the reserved liquid to a blender. Add the double cream and blend until completely smooth.

Strain the liquidized soup through a fine sieve into a clean saucepan. Season with salt, pepper, and a pinch of cayenne. Set aside.

In a small separate saucepan, heat the remaining 20g (3/4 oz) of butter. Add the morels, the remaining chopped shallot, and a little salt. Cook gently until the morels have released their liquid and are tender.

To serve, reheat the asparagus soup. Warm the reserved asparagus tips in a little of the reserved cooking liquid.

Ladle the hot soup into plates. Garnish the center of each bowl with a spoonful of the cooked morel mixture and two warm asparagus tips.

If using dried morels, do not discard the soaking water. Strain it carefully and add a splash to the soup for extra mushroom flavor, ensuring no grit remains.
For a smoother texture, ensure the soup is passed through a fine-mesh sieve after blending to remove any fibrous bits from the asparagus stalks.
This soup is best served immediately while hot to preserve the delicate flavor of the fresh asparagus.
Vegetable stock can be substituted for water when cooking the asparagus for a richer base flavor.
