  1. In a large saucepan, melt 2 tablespoons of the butter with the peanut oil and sesame oil over moderate heat.

  7. Stir in the remaining 2 tablespoons of butter until melted and incorporated for extra richness.

Note

For a vegetarian version, substitute chicken stock with vegetable stock.

Adjust the amount of sugar based on the sweetness of your ginger and the acidity of your stock.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove; do not microwave high power as the cream may curdle.

If the soup is too thick after blending, add a splash of additional stock or water to reach desired consistency.
