This comforting dish reimagines classic scalloped potatoes by swapping heavy cream for a velvety skim milk sauce thickened with just a touch of flour. The result is a side dish that retains all the comforting, tender texture of the original but feels much lighter on the palate. Thinly sliced baking potatoes layer beautifully with a savory blend of garlic powder and a subtle kick of cayenne pepper. It’s the perfect accompaniment to roasted chicken or ham for a balanced family dinner. Serve it warm, perhaps with a light sprinkle of cheddar if desired, for a satisfying meal that doesn’t weigh you down. Ideal for potlucks, holiday tables, or a cozy weeknight supper where comfort food meets mindful eating.

Description

This comforting dish reimagines classic scalloped potatoes by swapping heavy cream for a velvety skim milk sauce thickened with just a touch of flour. The result is a side dish that retains all the comforting, tender texture of the original but feels much lighter on the palate. Thinly sliced baking potatoes layer beautifully with a savory blend of garlic powder and a subtle kick of cayenne pepper. It’s the perfect accompaniment to roasted chicken or ham for a balanced family dinner. Ingredients

Directions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Peel the baking potatoes and slice them thinly and evenly using a knife or mandoline.
  3. In a saucepan, combine the skimmed milk, flour, salt, garlic powder, and cayenne pepper.
  4. Cook the mixture over medium heat, stirring constantly, until the sauce thickens sufficiently to coat the back of a spoon.
  5. Arrange a layer of potato slices in the bottom of a greased casserole dish.
  6. Spoon half of the thickened milk sauce over the potato slices.
  7. Repeat the layering with the remaining potato slices and the rest of the sauce.
  8. Cover the dish with a lid or aluminum foil.
  9. Bake in the preheated oven for 50 minutes to 1 hour, or until the potatoes are tender when pierced with a fork.
  10. Remove from the oven. If desired, sprinkle with shredded cheddar cheese and let stand for a few minutes before serving.

Note

For best results, use a mandoline to ensure uniform potato slices, which helps them cook evenly.

If you prefer a crispier top, uncover the dish for the last 10-15 minutes of baking.

This dish can be prepared ahead of time and refrigerated before baking; add 10-15 minutes to the cooking time if baking from cold.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
