  2. Peel the potatoes if the skin is tough; otherwise, scrub them clean and rinse. Leave them whole.
  3. Cut the potatoes into thin slices, slicing almost all the way through but leaving the bottom intact so they remain connected. Use the handle of a spoon to stop the knife from cutting completely through.
  4. Place the potatoes in a baking dish and gently fan the slices outward.

Note

You can substitute the fresh herbs with additional dried herbs if fresh ones are unavailable, but reduce the quantity slightly as dried herbs are more potent.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or toaster oven to maintain crispiness.
