  4. To make the dough, place all-purpose flour, sugar, and butter or lard in a food processor or large bowl.

  6. Slowly add Marsala wine (or dry white wine) to the mixture, one tablespoon at a time.
  7. Shape the mixture into a soft, non-sticky ball, adding more wine if necessary.
  8. Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic.
  9. Wrap the dough tightly in plastic wrap and refrigerate for at least 45 minutes.
  10. Remove the chilled dough from the refrigerator and divide it in half.
  11. Keep one half refrigerated while working with the other.
  12. Roll the dough out on a floured surface into a thin rectangle, approximately 14 inches long and 3 inches wide, or use a pasta machine set to the finest setting.
