  1. Cover dried mushrooms with warm water and let stand for 30 minutes to soften.
  2. Drain mushrooms, cut off and discard stems, squeeze dry, then thinly slice and set aside.
  3. Cut chicken breasts into bite-sized pieces.
  4. In a bowl, combine soy sauce, cornstarch, dry sherry, water, and a dash of white pepper.
  5. Add chicken pieces to the marinade, toss to coat, add 1.5 teaspoons of salad oil, and let stand for 15 minutes.
  6. In a small bowl, mix together water, dry sherry, oyster sauce, sugar, sesame oil, and cornstarch to create the cooking sauce; set aside.
  7. Place a wok or wide frying pan over high heat and add 2 tablespoons of salad oil.
  8. When the oil is hot, add minced garlic and stir once.
