Description

This luxurious chocolate mascarpone cream transforms simple ingredients into an indulgent dessert centerpiece. By folding melted milk chocolate into a stabilized mascarpone base, you achieve a texture that is both light and intensely flavorful. The addition of egg yolks cooked gently over simmering water ensures a silky, safe, and smooth consistency, while whipped egg whites provide an airy lift that balances the richness. A hint of Kahlua and rum adds depth, making this cream perfect for layering with soaked ladyfingers or serving as a standalone mousse. It is an elegant, homemade treat that delivers a sophisticated coffee-shop quality to your table without the hassle of complex baking techniques.

Ingredients

Directions

  1. Beat the mascarpone cheese in a large bowl using an electric mixer until it is smooth and fluffy, scraping down the sides frequently.
  2. Meanwhile, place the milk chocolate in a medium heatproof bowl set over a saucepan of simmering water (bain-marie) and melt gently, stirring until smooth. Set aside to cool slightly.
  3. In a separate heatproof bowl set over the simmering water, whisk together the egg yolks and 1/4 cup sugar until the mixture is hot to the touch and the sugar has completely dissolved.
  4. Remove the yolk mixture from the heat and scrape it into the beaten mascarpone. Beat on medium speed just until combined.
  5. Reduce the mixer speed to low and gradually add the melted chocolate, mixing well until fully incorporated.
  6. In a clean, large bowl, whip the egg whites using a whisk attachment until soft peaks form.
  7. Gradually add the remaining 1/4 cup sugar to the egg whites and continue beating until they are shiny, firm, and hold stiff peaks but are not dry.
  8. Gently fold the whipped egg whites into the mascarpone-chocolate mixture in three additions, using a spatula to maintain airiness.
  9. Stir in the Kahlua and rum until evenly distributed.
  10. For the soaking liquid, combine espresso, water, sugar, Kahlua, and rum in a small pot. Bring to a boil, then remove from heat and let cool completely.
  11. Prepare your serving glasses (parfait or Pilsner glasses work well) and cut cake circles (ladyfingers or sponge) to fit.
  12. Place a small amount of the mascarpone cream in the bottom of each glass.
  13. Dip a cake circle quickly into the cooled soaking liquid, squeezing out any excess, and place it on top of the cream.
  14. Ladle another layer of cream over the cake, followed by another soaked cake circle, and finish with a final layer of cream.
  15. Refrigerate the assembled glasses for at least one hour, or until the layers have set.
  16. Just before serving, decorate the top of each dessert with sifted cocoa powder and coarsely grated milk chocolate.
