Chocolate Mascarpone Cream: Tiramisu Part 2
Description
This luxurious chocolate mascarpone cream transforms simple ingredients into an indulgent dessert centerpiece. By folding melted milk chocolate into a stabilized mascarpone base, you achieve a texture that is both light and intensely flavorful. The addition of egg yolks cooked gently over simmering water ensures a silky, safe, and smooth consistency, while whipped egg whites provide an airy lift that balances the richness. A hint of Kahlua and rum adds depth, making this cream perfect for layering with soaked ladyfingers or serving as a standalone mousse. It is an elegant, homemade treat that delivers a sophisticated coffee-shop quality to your table without the hassle of complex baking techniques.Ingredients
Directions
-
Beat the mascarpone cheese in a large bowl using an electric mixer until it is smooth and fluffy, scraping down the sides frequently.
-
Meanwhile, place the milk chocolate in a medium heatproof bowl set over a saucepan of simmering water (bain-marie) and melt gently, stirring until smooth. Set aside to cool slightly.
-
In a separate heatproof bowl set over the simmering water, whisk together the egg yolks and 1/4 cup sugar until the mixture is hot to the touch and the sugar has completely dissolved.
-
Remove the yolk mixture from the heat and scrape it into the beaten mascarpone. Beat on medium speed just until combined.
-
Reduce the mixer speed to low and gradually add the melted chocolate, mixing well until fully incorporated.
-
In a clean, large bowl, whip the egg whites using a whisk attachment until soft peaks form.
-
Gradually add the remaining 1/4 cup sugar to the egg whites and continue beating until they are shiny, firm, and hold stiff peaks but are not dry.
-
Gently fold the whipped egg whites into the mascarpone-chocolate mixture in three additions, using a spatula to maintain airiness.
-
Stir in the Kahlua and rum until evenly distributed.
-
For the soaking liquid, combine espresso, water, sugar, Kahlua, and rum in a small pot. Bring to a boil, then remove from heat and let cool completely.
-
Prepare your serving glasses (parfait or Pilsner glasses work well) and cut cake circles (ladyfingers or sponge) to fit.
-
Place a small amount of the mascarpone cream in the bottom of each glass.
-
Dip a cake circle quickly into the cooled soaking liquid, squeezing out any excess, and place it on top of the cream.
-
Ladle another layer of cream over the cake, followed by another soaked cake circle, and finish with a final layer of cream.
-
Refrigerate the assembled glasses for at least one hour, or until the layers have set.
-
Just before serving, decorate the top of each dessert with sifted cocoa powder and coarsely grated milk chocolate.
