Chocolate Mousse Cake recipe image

This Chocolate Mousse Cake is the ultimate indulgence for serious chocolate lovers. Unlike traditional dense cakes, this recipe uses a classic genoise technique where egg whites are whipped into stiff peaks and gently folded into a rich chocolate and egg yolk mixture. The result is a cake that is impossibly light, airy, and moist, with a texture that melts in your mouth. The deep flavor of semisweet chocolate shines through, balanced by the subtle sweetness of granulated sugar. It’s perfect for birthdays, anniversaries, or any evening when you want to impress guests with a sophisticated yet approachable dessert. Serve it plain or with a dusting of cocoa powder and fresh berries for a beautiful presentation.

Ingredients

Directions

  1. Preheat the oven to 325ðF (165ðC).
  2. Coat three 3x9x1.5-inch cake pans with melted butter and line with parchment paper. Lightly coat the paper with more butter and set aside.
  3. Heat 1 inch of water in the bottom of a double boiler over medium heat.
  4. Place 1/2 pound unsalted butter and 8 oz semisweet chocolate pieces in the top of the double boiler.
  5. Cover tightly with plastic wrap and heat for 10-12 minutes until melted.
  6. Remove from heat, stir until smooth, and let sit at room temperature.
  7. In a large bowl, beat 8 egg yolks and 3/4 cup granulated sugar on high speed until thickened and lemon-colored, about 4 minutes.
  8. Scrape down the sides and beat for an additional 2 minutes.
  9. In a separate large stainless steel bowl, whisk 4 egg whites until stiff peaks form, about 3-4 minutes.
  10. Gently fold the melted chocolate mixture into the egg yolk mixture using a rubber spatula.
  11. Add one-quarter of the beaten egg whites to the chocolate mixture and stir to incorporate.
  12. Gently fold in the remaining egg whites until no white streaks remain.
  13. Divide the batter evenly among the prepared pans.
  14. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  15. Allow cakes to cool in the pans for 15 minutes.
  16. Invert cakes onto cake circles, remove the parchment paper, and refrigerate for 30 minutes before serving.
