Description

These classic chocolate truffles are the epitome of indulgent simplicity. Made with just bittersweet chocolate and heavy cream, the resulting ganache is incredibly smooth, dense, and rich. The intense chocolate flavor is balanced by the creamy texture, creating a melt-in-your-mouth experience that feels luxurious without being overly complicated. These truffles are perfect for holiday gifts, special dinner parties, or simply satisfying a serious sweet tooth. While traditional recipes often include liqueur, this version lets the pure quality of the chocolate shine through. They require some patience to set and roll, but the reward is a professional-quality dessert that looks and tastes as good as it feels to make.

Ingredients

Directions

  1. Finely chop the bittersweet chocolate and place it in a large heatproof bowl.
  2. Pour the heavy cream into a small saucepan and bring it to a simmer over medium heat. Do not let it boil vigorously.
  3. Pour the hot cream over the chopped chocolate. Let it sit undisturbed for 2 minutes to allow the chocolate to soften.
  4. Gently stir the mixture with a spatula, starting from the center and working outward, until completely smooth and glossy.
  5. Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the ganache to prevent a skin from forming.
  6. Refrigerate the ganache for at least 4 hours or until firm enough to scoop.
  7. Using a small melon baller or teaspoon, scoop out portions of the chilled ganache and roll them between your palms to form smooth 1/2-inch balls.
  8. Place the formed truffles on a parchment-lined baking sheet.
  9. Spread unsweetened cocoa powder on a plate or shallow bowl.
  10. Roll each truffle in the cocoa powder until fully coated.
  11. Return the coated truffles to the parchment-lined sheet and refrigerate for 15 minutes to set the coating.
  12. Store in an airtight container in the refrigerator for up to two weeks or freeze for longer storage.
