Ingredients

Directions

  1. Core and quarter the 5 pounds of cooking apples, leaving the skins on.
  2. Place the apple pieces and 1 1/2 cups of apple cider into a large crockpot.
  3. Cover and cook on high heat until the apples are very soft and tender, approximately 1 to 1 1/2 hours.
  4. Carefully transfer the cooked apples and liquid into a blender or food processor in batches.
  5. Puree until completely smooth and free of lumps.
  6. Pour the puree back into the clean crockpot.
  7. Add 3 cups of brown sugar, ensuring it mixes well with the apple puree.
  8. Stir in the juice and grated peel of one lemon and one orange.
  9. Add 2 teaspoons cinnamon, 1 teaspoon allspice, 1/4 teaspoon cloves, and 1/4 teaspoon nutmeg.
  10. Stir thoroughly to combine all ingredients evenly.
  11. Cover the crockpot and cook on high heat, stirring occasionally every hour, until the mixture thickens significantly and turns a deep mahogany color, about 4 hours.
  12. Once thickened, remove from heat. The apple butter will continue to thicken as it cools.
  13. Ladle the hot apple butter into sterilized jars for canning, or transfer to airtight containers to refrigerate for up to two weeks or freeze for longer storage.
