Ingredients

Directions

  1. Cut the slab bacon into 1/2-inch strips.
  2. Heat peanut oil in a large Dutch oven or heavy skillet over medium heat.
  3. Add the bacon strips and cook until crisp and browned, then remove with a slotted spoon, leaving the fat in the pan.
  4. Season the chicken pieces with salt and pepper.
  5. Brown the chicken pieces in the bacon fat, working in batches if necessary, until golden on all sides. Remove chicken and set aside.
  6. Reduce heat to medium-low and add the thinly sliced onions to the pan.
  7. Cook onions, stirring occasionally, until softened and translucent, about 5-7 minutes.
  8. Add the finely chopped garlic and cook for 1 minute until fragrant.
  9. Pour in the apple cider and Calvados, scraping up any browned bits from the bottom of the pan.
  10. Return the chicken and bacon to the pot.
  11. Add the pitted prunes and bouquet garni.
  12. Bring the liquid to a simmer, then cover and reduce heat to low.
  13. Simmer gently for 45-60 minutes, or until the chicken is tender and cooked through.
  14. Remove the bouquet garni.
  15. Serve the chicken and braised vegetables with the sauce spooned over the top.
