Ingredients

Directions

  1. Soak clams or mussels in a large pot of cold water mixed with cornstarch to remove grit.
  2. Drain the shellfish several times in fresh cold water until the water runs clear.
  3. Clean the lobsters or crabs and cut them into manageable pieces, cracking shells as needed.
  4. Heat olive oil in a large, heavy-bottomed pot over medium heat.
  5. Add minced garlic, chopped onions, green onions, celery, bell pepper, thyme, bay leaf, fennel seed, and saffron.
  6. Sauté the aromatics for 5 minutes until softened and fragrant.
  7. Stir in chopped fresh tomatoes, canned plum tomatoes, wine, parsley, salt, and pepper.
  8. Bring the sauce to a simmer and cook for 10 minutes to meld flavors.
  9. Add the cleaned clams or mussels to the pot and cover.
  10. Simmer for 5 to 7 minutes until the shellfish open, discarding any that remain closed.
  11. Gently add the shrimp, snapper pieces, and lobster or crab chunks to the stew.
  12. Cover and cook for 5 to 7 minutes until the fish is opaque and cooked through.
  13. Mash one clove of garlic with anchovy paste and stir into the stew to deepen the flavor.
  14. Simmer uncovered for 2 more minutes, then taste and adjust seasoning with salt and pepper.
  15. Ladle into large bowls and serve immediately with crusty bread.
