Description

This classic New England clam chowder combines salt pork, fresh clams, potatoes, onions and milk to create a rich, creamy soup with authentic coastal flavour. The rendered salt pork provides a deep savoury base while the fresh clams add sweetness and the potatoes give the chowder its hearty texture.

Ingredients

Directions

  1. Cut the salt pork into small dice and render it slowly in a large saucepan.
  2. Remove and reserve the crisp cracklings.
  3. Cook the sliced onion in the rendered fat until golden.
  4. Bring the water to a boil and cook the cubed potatoes for about 10 minutes, or until just tender.
  5. Add the chopped clams and simmer for approximately 25 minutes.
  6. Stir in the milk, reserved cracklings, cooked potatoes and butter.
  7. Season to taste with salt and freshly ground black pepper.
  8. Heat gently until hot, taking care not to boil after adding the milk.
  9. Serve hot with oyster crackers.
