Ingredients

Directions

  1. Preheat oven to 350ðF (175ðC). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, beating well after each addition to ensure they are fully incorporated.
  4. Stir in the vanilla extract.
  5. In a separate bowl, sift together the cake flour, cocoa powder, and baking powder.
  6. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Beat until just blended after each addition.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes, or until a wooden toothpick inserted into the center comes out clean.
  9. Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  10. While cakes cool, prepare the fudge frosting. In a heavy 3-quart saucepan, combine 1 cup sugar, 1/2 cup cocoa, 1/2 cup milk, 1/4 cup corn syrup, and a pinch of salt.
  11. Cook and stir over medium-low heat until the sugar dissolves.
  12. Increase heat to medium and cook without stirring until the mixture reaches the soft-ball stage (234ðF/112ðC) on a candy thermometer.
  13. Remove from heat and let cool to 110ðF (43ðC) without stirring.
  14. Add 3 tablespoons of butter and 1 1/2 teaspoons vanilla extract.
  15. Beat the mixture vigorously until it is thick, creamy, and of spreading consistency.
  16. Spread a layer of frosting on one cake layer and top with the second layer. Frost the top and sides of the cake.
