Ingredients

Directions

  1. Grease a baking sheet or line it with parchment paper; set aside.
  2. In a heavy-bottomed saucepan, combine the sugar, corn syrup, and 1 cup of the cream.
  3. Place the saucepan over medium heat and stir until the sugar is completely dissolved.
  4. Attach a candy thermometer to the side of the pan and bring the mixture to a boil without stirring.
  5. Cook until the mixture reaches the soft-ball stage (235ðF / 112ðC).
  6. Slowly pour in the remaining 1 cup of cream in a thin stream, being careful not to splash the hot sugar.
  7. Return the mixture to a boil and cook until it reaches the firm-ball stage (248ðF / 120ðC).
  8. Remove the pan from the heat and let the mixture cool slightly, stirring occasionally to prevent skin formation.
  9. Pour the hot caramel onto the prepared baking sheet.
  10. Allow the caramel to cool completely at room temperature until firm enough to cut.
  11. Cut into squares using a sharp knife dipped in hot water.
  12. Wrap individual pieces in wax paper or foil to store.
