Description

These Continental rolls offer a delightful contrast between a crisp, crackling crust and a tender, airy crumb. Made with simple pantry staples like flour, yeast, and water, they capture the essence of rustic European bakery breads. The traditional cross-cut on top allows the rolls to expand beautifully during baking, creating an authentic look and texture. They are wonderfully versatile, serving as a hearty side to hearty stews, a vehicle for dipping in olive oil, or a comforting addition to a weekend brunch. Fresh from the oven, the aroma fills the kitchen, promising a warm, satisfying bite that tastes far better than any store-bought alternative.

Ingredients

Directions

  1. Measure warm water into a large mixing bowl.
  2. Sprinkle dry yeast over the water and stir until fully dissolved.
  3. Add sugar, salt, and 3 cups of flour to the yeast mixture.
  4. Stir to combine, then beat the batter until it is smooth.
  5. Stir in the remaining 3 cups of flour until a shaggy dough forms.
  6. Turn the dough out onto a lightly floured surface.
  7. Knead the dough for about 10 minutes until it becomes smooth and elastic.
  8. Place the dough in a greased bowl and brush the top with soft shortening.
  9. Cover the bowl and let the dough rise in a warm, draft-free place until doubled in size, about 1 hour.
  10. Punch the dough down and turn it out onto a lightly floured board.
  11. Divide the dough in half.
  12. Shape each half into a log about 10 inches long.
  13. Cover the logs and let them rest for 5 minutes.
  14. Cut each log into 10 equal pieces and shape them into smooth balls.
  15. Place the rolls about 3 inches apart on a lightly greased baking sheet.
  16. Using scissors, make a cross cut about 1/2 inch deep on top of each roll by making two snips at right angles.
  17. Cover the rolls and let them rise until doubled in size.
  18. Bake at 425&# 194;°F (218ðC) for 15 to 20 minutes, or until golden brown.
  19. Remove from the oven, brush with egg white (if available), and return to the oven for 2 minutes for a glossy finish.
  20. Remove rolls from the baking sheet and serve hot or at room temperature.
