Description

These Continental Stuffed Green Peppers offer a comforting, classic twist on the traditional dish. The vibrant green bell peppers are filled with a savory mixture of seasoned ground chuck, fluffy long-grain rice, and aromatic herbs. They bake in a rich, tangy sauce made from whole tomatoes, dry white wine, and fresh garlic, resulting in tender peppers with a flavorful, slightly acidic bite. This meal is perfect for a cozy family dinner or a potluck contribution. The combination of earthy beef, bright wine notes, and herbal undertones creates a well-balanced flavor profile that pairs beautifully with simple sides like crusty bread or a light green salad.

Ingredients

Directions

  1. Preheat the oven to 350&# 194;°F (175ðC).
  2. Cut 4 large green bell peppers in half lengthwise and remove seeds and membranes.
  3. In a medium saucepan, heat oil over medium heat. Add crushed garlic and diced onion, cooking for about 10 minutes until tender.
  4. Add whole tomatoes (crushed by hand), tomato puree, white wine, sugar, oregano, basil, and thyme to the pan.
  5. Bring the sauce to a boil, then reduce heat to low and simmer covered for 20 minutes.
  6. Meanwhile, cook rice according to package instructions. Set aside covered to keep warm.
  7. In a skillet, cook ground chuck over medium heat until browned. Drain excess fat.
  8. Stir the cooked rice and 1/2 cup of the prepared tomato sauce into the beef. Season with salt and pepper to taste.
  9. Spoon the beef and rice mixture into the pepper halves.
  10. Place peppers filling-side down in a 13x9 inch baking dish.
  11. Pour the remaining tomato sauce over the peppers and cover the dish with foil.
  12. Bake for 35 to 40 minutes until peppers are tender.
