Description

A warm and satisfying chowder featuring sweet corn, diced potatoes, and a savory bacon base. This soup is creamy, well-seasoned, and perfect for cold days. Simple to prepare with common pantry ingredients, it delivers a home-style flavor that is both hearty and light.

Directions

  1. Add the bacon grease (use butter if you don't have or want to use bacon grease) to a 5-quart saucepan and place over medium heat.
  2. When the grease is hot, add the onions, celery, peppers, and cook, stirring occasionally, for 7 to 8 minutes, or until soft.
  3. Add the flour and cook for 4 minutes, stirring.
  4. Using a wire whisk, whisk in the chicken broth and whip out any lumps until smooth.
  5. Reduce the heat to low and simmer for 15 minutes.
  6. While the soup is simmering, puree half the corn in a food processor.
  7. Add the pureed corn, remaining corn kernels, potatoes, and bay leaf to the saucepan and simmer until the potatoes are tender, stirring occasionally, about 15 minutes.
  8. Whisk in the evaporated skim milk, sour cream, and seasonings.
  9. Remove the bay leaf.
  10. Cook until hot; do not boil.
  11. Serve immediately.
