  1. Preheat grill to medium heat, ensuring coals are evenly spread for indirect cooking.
  2. In a small saucepan, melt 1 cup of butter over low heat.
  3. Stir in 1/3 cup lemon or lime juice, 1 tablespoon crushed Italian seasoning, 2 1/2 teaspoons salt, crushed garlic cloves, 3/4 teaspoon dry mustard, and 1/4 teaspoon coarse black pepper.
  4. Cut the broiler-fryer chickens in half and sprinkle each side lightly with additional salt and pepper.
  5. Place chicken halves on the grill skin-side up and brush generously with the herb butter mixture.
  6. Grill chicken about 4 to 5 inches from the coals, turning occasionally and basting frequently, until tender and cooked through, about 1 hour.
  7. Meanwhile, combine 1 1/2 cups orange marmalade, 3 tablespoons lemon or lime juice, and 3 tablespoons butter in a small saucepan.
  8. Heat the marmalade mixture, stirring constantly, until the butter is melted and the sauce is smooth.
  9. About 4 minutes before the chicken is done, brush some of the marmalade glaze over each chicken half and grill for 1 minute.
  10. Turn the chicken pieces, brush with the remaining marmalade mixture, and grill for 1 more minute until glossy and slightly caramelized.
  11. Remove chicken from the grill and let rest for 5 minutes before serving.
