Description

These Cranberry-Raspberry Preserves offer a perfect balance of sweet and tart flavors, making them an excellent companion to holiday meats, creamy cheeses, or warm toast. The combination of fresh raspberries and cranberries creates a complex flavor profile that is both refreshing and rich. With the addition of fresh orange juice and zest, the preserves gain a bright citrus note that cuts through the sugar, enhancing the natural fruitiness. This recipe yields a smooth, spreadable consistency that sets beautifully. Ideal for gifting during the holidays or enjoying throughout the winter months, these preserves are simple to make yet impressive in their vibrant color and taste. They require minimal effort but deliver a professional-quality result that elevates any meal or snack.

Ingredients

Directions

  1. Zest one orange and set the zest aside.
  2. In a medium bowl, stir together the raspberries and 1 cup of sugar.
  3. Let the raspberry mixture stand for 1 hour to release juices.
  4. In a nonreactive shallow preserving pan, combine the cranberries and the remaining 1 1/2 cups of sugar.
  5. Place the pan over high heat and stir constantly.
  6. Cook until the sugar dissolves and cranberries begin to release juice, about 5 minutes.
  7. Continue cooking until all cranberries have popped and the mixture becomes syrupy and boils.
  8. Skim off any foam that forms on the surface.
  9. Cook and stir until the mixture thickens, about 10 minutes more.
  10. Add the raspberries and all their accumulated juice to the pan.
  11. Cook for 10 minutes more, stirring frequently.
  12. Stir in the fresh orange juice and reserved orange zest.
  13. Remove a small amount of the mixture and place it on a saucer in the freezer for 5 minutes.
  14. Check for setting: if the mixture wrinkles when pushed to one side, it is ready.
  15. If not set, continue cooking for 5 minutes and retest.
  16. Once ready, turn down the heat to a simmer.
  17. Ladle the hot preserves into hot sterilized jars.
  18. Wipe the rims clean with a damp towel and seal with new lids and metal rings.
  19. Process in a hot-water bath for 5 minutes.
  20. Remove jars, check seals, label, and store in a cool, dark place.
