This comforting Crockpot Pot Roast is the ultimate weeknight dinner solution. A generous chuck roast or brisket is seasoned simply with salt and pepper, then nestled among sliced potatoes, carrots, and onions. As it slow-cooks for hours, the meat becomes incredibly tender, falling apart at the touch, while the vegetables absorb the savory juices. The result is a hearty, home-style meal with minimal effort. Perfect for busy evenings, cold nights, or feeding a hungry family. Serve as-is or thicken the remaining juices into a delicious gravy. It’s a classic Southern-style comfort food that requires very little hands-on time but delivers maximum flavor.

Directions
-
Peel and thinly slice 2-3 carrots and a few potatoes; peel and slice 1-2 onions.
-
Place the sliced potatoes, carrots, and onions in the bottom of the crockpot.
-
Season a 3-4 lb brisket, rump roast, or pot roast generously with 1 1/2 tsp salt and 1/4 tsp pepper.
-
Place the seasoned meat on top of the vegetables in the crockpot.
-
Pour 1/2 cup of water or beef consomme over the meat and vegetables.
-
Cover and cook on Low for 10 to 12 hours, or on High for 5 to 6 hours.
-
Remove the meat and vegetables carefully with a spatula.
-
If desired, thicken the remaining liquid in the pot to create a gravy.
-
For a variation without vegetables, season the meat, add no liquid, and cook as directed.
-
For an Onion Mushroom variation, omit root vegetables, add 4 oz drained sliced mushrooms, and mix 1/2 cup beef consomme with one envelope dry onion soup mix; pour over meat and cook as directed.
-
To keep smaller amounts moist, rub 1 tablespoon of butter or oil directly on top of the meat before cooking.
