Ingredients

Directions

  1. Peel and thinly slice 2-3 carrots and a few potatoes; peel and slice 1-2 onions.
  2. Place the sliced potatoes, carrots, and onions in the bottom of the crockpot.
  3. Season a 3-4 lb brisket, rump roast, or pot roast generously with 1 1/2 tsp salt and 1/4 tsp pepper.
  4. Place the seasoned meat on top of the vegetables in the crockpot.
  5. Pour 1/2 cup of water or beef consomme over the meat and vegetables.
  6. Cover and cook on Low for 10 to 12 hours, or on High for 5 to 6 hours.
  7. Remove the meat and vegetables carefully with a spatula.
  8. If desired, thicken the remaining liquid in the pot to create a gravy.
  9. For a variation without vegetables, season the meat, add no liquid, and cook as directed.
  10. For an Onion Mushroom variation, omit root vegetables, add 4 oz drained sliced mushrooms, and mix 1/2 cup beef consomme with one envelope dry onion soup mix; pour over meat and cook as directed.
  11. To keep smaller amounts moist, rub 1 tablespoon of butter or oil directly on top of the meat before cooking.
