Ingredients

Directions

  1. In a medium bowl, dissolve the active dry yeast in the warm water. Let stand for about 5-10 minutes until foamy.
  2. Stir in the lukewarm milk, melted margarine or butter, sugar, salt, egg, and flour.
  3. Beat the mixture vigorously until it is smooth and free of lumps. The batter should be thick but pourable.
  4. Cover the bowl with a damp cloth or plastic wrap. Let the batter rise in a warm place for 40 to 60 minutes, or until it has doubled in size and become bubbly.
  5. Heat a griddle or heavy skillet over medium heat. Generously grease the surface and the insides of 4 to 6 crumpet rings (or makeshift rings from tuna cans).
  6. Place the greased rings on the hot griddle. Pour about 2 tablespoons of batter into each ring.
  7. Cook for 1 to 2 minutes, until bubbles form on the surface and the bottoms are golden brown.
  8. Carefully remove the rings. Flip the crumpets over and cook the other side for another 1 to 2 minutes until golden.
  9. Remove crumpets from the heat. Repeat the process with the remaining batter, greasing the rings between batches.
  10. Serve immediately with butter, jam, marmalade, or honey.
