Ingredients

Directions

  1. Peel and cut the carrots into 1-inch chunks.
  2. Place carrots in a medium saucepan with 3-4 inches of water and steam over medium heat for 15 minutes until soft.
  3. Drain the carrots thoroughly and mash well using a potato masher.
  4. Heat oil in a large skillet over medium heat.
  5. Add minced garlic, diced onions, celery, and green peppers; sauté for 7 minutes.
  6. Stir in tamari, basil, garlic powder, parsley, and oregano; sauté for 2 minutes more until vegetables are soft.
  7. In a large bowl, combine the mashed carrots, sautéed vegetable mixture, tahini, and peanut butter.
  8. Mix thoroughly until the ingredients are evenly distributed.
  9. If the mixture is too wet to hold its shape, stir in wheat germ, bran, or flour.
  10. Season the mixture with salt and pepper to taste.
  11. Preheat the oven to 350ðF (175ðC).
  12. Form the mixture into patties and place them on an oiled baking sheet.
  13. Bake for 10 to 12 minutes until the tops are golden.
  14. Flip the patties and bake on the other side until golden brown.
