  5. Take about two-thirds of the hominy mixture and press it into the bottom and sides of the greased ramekins or casserole dish to form a crust.
  6. In a separate bowl, combine diced leftover pork, beef, or chicken with 2 tablespoons of chipotle salsa marinade, diced tomato, chopped cilantro, 5 raisins, and 3 chopped green olives.
