Curried Chicken & Bow Tie Pasta Salad
Description
This Curried Chicken & Bow Tie Pasta Salad is a vibrant and comforting dish that perfectly balances warm spices with creamy textures. Tender chicken, gently poached with aromatic herbs like thyme and bay leaf, is shredded and tossed with al dente bow tie pasta and crisp, finely shredded tri-color peppers. The star of the dish is the homemade curry mayonnaise, created by blooming curry powder in oil and white wine before blending it into a smooth, flavorful dressing. Its ideal for picnics, potlucks, or a light summer lunch. The dish is best served chilled, allowing the curry flavors to meld beautifully with the creamy sauce and fresh vegetables.Ingredients
Directions
-
Place chicken in a large pot and cover with cold water.
-
Add peppercorns, bay leaf, parsley stalk, thyme sprig, quartered onion, carrot, and celery to the pot.
-
Bring to a bare boil over medium-high heat, then reduce heat to low and cover.
-
Simmer gently for 50 minutes until chicken is cooked through.
-
Remove chicken from liquid and let cool slightly, then shred meat and discard skin and bones.
-
In a small saucepan, heat vegetable oil over medium heat.
-
Add finely diced small onion and cook until softened, about 3-4 minutes.
-
Stir in curry powder and cook for 1 minute until fragrant.
-
Add white wine and water, then bring to a rapid boil.
-
Boil rapidly until reduced to about 3 tablespoons, creating a thick curry reduction.
-
Strain the curry reduction through a fine-mesh sieve to remove solids, then let cool completely.
-
In a bowl, whisk together mayonnaise, warm water, salt, pepper, and the cooled curry reduction until smooth.
-
In a large mixing bowl, combine shredded chicken, cooked bow tie pasta, and most of the shredded green, red, and yellow peppers.
-
Pour curry mayonnaise over the chicken and pasta mixture.
-
Toss gently until all ingredients are evenly coated with the dressing.
-
If the dressing is too thick, add additional warm water, one teaspoon at a time, until desired consistency is reached.
-
Serve immediately on a bed of spinach, garnished with the reserved shredded peppers.
