Ingredients

Directions

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente.
  2. While the pasta cooks, heat the oil in a large skillet over medium heat.
  3. Add the diced onion, sliced scallions, minced garlic, and chopped jalapeño (if using) to the skillet.
  4. Sauté the vegetables until the onions are soft and lightly browned, about 4 minutes.
  5. Stir in the curry powder and cook for 1 minute until fragrant.
  6. Add the diced tomato and soy sauce to the skillet.
  7. Reduce heat to low and simmer until the tomatoes begin to break down and release their juices.
  8. Stir in your choice of vegetables, such as grated carrots, diced zucchini, broccoli florets, or mushrooms.
  9. Cook the vegetables for 3 to 5 minutes until tender-crisp.
  10. Remove the skillet from the heat and set aside.
  11. Just before draining the pasta, reserve 1/4 cup of the pasta cooking water.
  12. Add the reserved pasta water to the curry mixture and return the skillet to low heat to warm through.
  13. Drain the pasta and return it to the pot or transfer it to the skillet.
  14. Add the curry vegetable mixture to the pasta and toss well to coat evenly.
  15. Stir in the honey and raisins, mixing until distributed throughout the dish.
  16. Serve immediately, garnished with fresh lime wedges on the side.
