Description

This Dakota Bread is a hearty, homemade loaf featuring a blend of bread, whole wheat, and rye flours. Enriched with honey, cottage cheese, and egg, it offers a complex, slightly sweet flavor profile. The dough is topped with wheat germ or rolled oats for a rustic finish and satisfying texture. Perfect for sandwiches or serving alongside soups and stews.

Directions

  1. Stir the yeast and honey into the warm water. Let stand until foamy, about 5 minutes.
  2. For food processor or mixer method: Put the remaining bread ingredients (flours, wheat germ, rye flour, oats, salt, cottage cheese, egg, and oil) into the bowl.
  3. Turn machine on and combine mixture. With machine running, slowly add the yeast mixture.
  4. Mix until dough cleans sides of bowl. If dough is too sticky, add more flour by the tablespoon, working it in before adding more. If dough is crumbly and dry, add more water by the teaspoon, working it in before adding more.
  5. Once desired consistency is reached (moist but not sticky), mix dough until well kneaded, uniformly supple and elastic, about 40 seconds in food processor, about 6 minutes in mixer.
  6. For hand method: Put ingredients in a large bowl. Mix well. Make a well in the center. Pour yeast mixture into the well.
  7. Work yeast mixture into ingredients, then knead on a floured board until smooth and elastic, about 10 minutes.
  8. Transfer dough to a large plastic bag, squeeze out air and seal at top, or place in a bowl. Let rise in a warm spot until doubled, about 1 1/2 hours.
  9. Oil a heat-proof glass pie plate. Sprinkle lightly with cornmeal.
  10. Punch dough down and shape into a smooth ball. Place smooth side up in the prepared plate.
  11. Cover loosely with oiled plastic. Let rise in a warm spot until doubled, about 1 hour.
  12. Fifteen minutes before baking, put a rack in the center of the oven; set oven at 375°F (190°C).
  13. When the loaf has doubled, brush the top with the beaten egg white.
  14. Sprinkle with additional wheat germ and/or rolled oats.
  15. Bake until the loaf is deep brown (cover with foil for the last 5 minutes if it gets too dark) and sounds hollow when tapped on the bottom, about 35 minutes.
  16. Place the loaf on a rack to cool.
