Ingredients

Directions

  1. In a small bowl, combine the gelatin and 3 tablespoons of the milk. Set aside to soften for 5-10 minutes.
  2. In a small, heavy saucepan, combine the chestnut puree and the remaining 1/2 cup plus 1 tablespoon of milk.
  3. Using the tip of a small sharp knife, scrape the seeds from the vanilla bean into the mixture; add the bean pod as well.
  4. Cook over low heat, stirring frequently, until hot, about 10 minutes.
  5. Remove from the heat and stir in the finely chopped chocolate until completely melted and smooth.
  6. Discard the vanilla bean pod.
  7. Transfer the warm chocolate-chestnut mixture to a food processor.
  8. Add the Cognac and process, scraping down the sides occasionally, until the mixture is very thick and creamy, at least 5 minutes.
  9. Add the reserved gelatin mixture and process briefly to blend, scraping down the bowl once.
  10. Transfer the chocolate mixture to a large bowl and set aside to cool slightly.
  11. In a double boiler (or a heatproof bowl set over simmering water), combine the egg whites, salt, and cream of tartar.
  12. Using a hand-held electric mixer, beat the mixture at medium speed until soft peaks form, about 1 minute.
  13. Insert a candy thermometer into the meringue.
  14. Gradually beat in the sugar until the meringue is firm, shiny, and the temperature reaches 150°F, about 5 minutes.
  15. Using a rubber spatula, gently fold 1/3 of the meringue into the chocolate mixture to lighten it.
  16. Gently fold in the remaining egg whites until just incorporated and no white streaks remain.
  17. Scrape the mousse into an 8-or 9-inch springform pan.
  18. Refrigerate until set, at least 5 hours or overnight.
  19. Dust the top of the cake with unsweetened cocoa powder.
  20. Unmold the cake and transfer it to a large serving plate.
  21. Serve chilled.
