Double Chocolate Mousse Cake
Description
This decadent Double Chocolate Mousse Cake is a showstopper for any celebration. It combines a tender, moist chocolate sponge with layers of airy, intense chocolate mousse, all bound together with a sticky rum syrup. The exterior is coated in a smooth, mirror-like chocolate ganache and glaze, providing a satisfying snap that gives way to the soft, creamy interior. While it requires some patience to assemble and chill, the result is a sophisticated, restaurant-quality dessert that feels luxurious yet achievable at home. Serve it chilled for the best texture, garnished with fresh chocolate shavings for an elegant finish.Ingredients
Directions
-
Preheat your oven to 350&# 194;°F (175ðC).
-
Grease and flour a 9-inch springform pan, then line the bottom with parchment paper. Grease and flour the parchment as well.
-
In a large mixing bowl, sift together the cake flour, baking soda, salt, 3/4 cup of the sugar, and cocoa powder.
-
In a separate bowl, whisk together the buttermilk and egg yolks.
-
Add the buttermilk mixture to the dry ingredients, alternating with the vegetable oil. Beat with an electric mixer on medium speed until the batter is smooth and shiny.
-
In a clean, grease-free bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup sugar while beating until stiff, glossy peaks form.
-
Gently fold the beaten egg whites into the chocolate batter in three additions, being careful not to deflate the mixture.
-
Pour the batter into the prepared springform pan and bake for 20 to 30 minutes, or until a toothpick inserted in the center comes out clean.
-
Remove the cake from the oven and let it cool completely on a wire rack.
-
Once cool, remove the springform ring and peel off the parchment paper.
-
Using a serrated knife, carefully slice the cake horizontally into three even layers.
-
Place a piece of parchment paper on a baking sheet and set the springform ring on top of it.
-
Place the first cake layer inside the ring. Brush generously with rum syrup.
-
Spread a layer of chocolate mousse over the cake, then place the second cake layer on top.
-
Brush the second layer with rum syrup, spread another layer of mousse, and top with the final cake layer.
-
Brush the top layer with rum syrup.
-
Cover the cake tightly with plastic wrap and freeze for at least 8 hours, or overnight, to firm up.
-
When ready to serve, run a warm knife around the edge of the ring. Wrap a hot towel around the outside of the ring to loosen it, then lift the ring off.
-
Transfer the cake to a serving platter. Cover the sides and top evenly with chocolate ganache.
-
Refrigerate for 20 minutes to set the ganache.
-
Pour chocolate glaze over the cake, covering it completely. Return to the refrigerator for 15 minutes until the glaze is set.
-
Garnish the top with chocolate shavings. Keep chilled until serving.
