Description

This decadent Down Island French Toast elevates the classic breakfast staple into a gourmet experience. Thick slices of stale brioche are soaked in a spiced custard of eggs, half-and-half, vanilla, and mace, then pan-fried until golden. The star of the dish is the rich, buttery foie gras, marinated in Cointreau and spices before being quickly seared to a dark crisp. Layered between the toast, the foie gras adds an unparalleled luxurious texture. Served atop a citrus-savory caramel sauce and accompanied by fresh tropical fruits, this dish balances sweet, savory, and acidic notes perfectly. It is an indulgent treat ideal for special weekend brunches or holiday mornings.

Ingredients

Directions

  1. Scrape the seeds from the vanilla bean, keeping the pod for another use if desired.
  2. In a small mixing bowl, combine half of the scraped vanilla seeds with 1 cup Cointreau or Cura&# 195;§ao.
  3. Add 1/2 teaspoon ground mace, 1/2 teaspoon ground cinnamon, and the zest of 1 orange to the liqueur mixture; whisk until combined.
  4. Place 12 oz of cleaned fresh foie gras into the marinade, ensuring it is fully submerged. Cover with plastic wrap and refrigerate for at least 1 hour.
  5. In a larger mixing bowl, whisk together the remaining vanilla seeds, 5 beaten eggs, 2 cups half-and-half, the remaining 1/2 teaspoon ground mace, and 1/2 teaspoon ground cinnamon.
  6. Cut 12 oz of slightly stale brioche into 1/3-inch thick slices, then cut each slice into triangles.
  7. Soak the brioche triangles in the egg mixture, allowing them to absorb the flavor. Soaking time depends on freshness; 1 minute is usually sufficient for stale bread.
  8. Keep the soaked bread covered in the refrigerator until ready to cook.
  9. Preheat the oven to 300 degrees Fahrenheit (149ðC).
  10. Remove the foie gras from the marinade and pat dry. Discard the marinade.
  11. Cut the foie gras into slices approximately 1/4 to 1/3 inch thick.
  12. Reserve the foie gras slices on a chilled plate.
  13. Heat clarified butter in a nonstick skillet over medium heat.
  14. Cook the soaked brioche triangles in the skillet until golden brown on both sides.
  15. Transfer the cooked French toast to a plate and keep warm in the preheated oven.
  16. Reheat the Citrus-Savory Caramel Sauce.
  17. Heat a separate nonstick skillet over high heat until very hot.
  18. Sear the foie gras slices for about 15 seconds on each side until dark and caramelized.
  19. Place 2 tablespoons of warm caramel sauce on each of 4 serving plates.
  20. Assemble the dish by layering a slice of French toast, a slice of seared foie gras, another slice of toast, another slice of foie gras, and topping with a final slice of toast.
  21. Serve immediately, garnished with mixed tropical fruits and orange segments if desired.
