  1. Cut the chicken into desired pieces and dip them in milk, then lay on a tray to drain.
  2. Sprinkle the drained chicken pieces with salt and pepper.
  3. Roll the chicken in flour that has been seasoned with salt and pepper.
  4. Dust off any excess flour from the chicken pieces.
  5. Heat 1/4 inch of melted shortening in a heavy iron skillet over medium heat.
  6. Place the floured chicken in the hot shortening, cover the pan, and fry until brown on one side.
  7. Remove the lid and turn the chicken pieces over.
  8. Continue frying until the chicken is brown on the other side.
  9. A few minutes before removing the chicken from the pan, add 1/4 cup of hot water.
  10. Replace the lid immediately and leave it on until the bubbling stops.
  11. Remove the lid and fry until all the water has cooked out and the crust becomes crisp.
  12. Remove the cooked chicken from the skillet and set aside to keep warm.
  13. Pour off all but 1 tablespoon of the shortening from the skillet, keeping the drippings and crunchy bits.
  14. Blend 1 tablespoon of flour into the remaining shortening and drippings.
  15. Gradually add 2 cups of milk, stirring constantly to prevent lumps.
  16. Bring the mixture to a boil and continue cooking for 3 to 5 minutes until the gravy is glossy and reaches the desired thickness.
  17. Add a pinch of pepper and enough salt to suit your taste.
  18. Serve the hot country gravy over the fried chicken.
