Description

These Dried Apple Cakes are a comforting, old-fashioned treat that transforms humble dried fruit into a luxurious dessert. The sourdough starter adds a subtle tang and tender crumb to the dough, which is rolled with chopped apples and then poached in a bubbling syrup of brown sugar, cinnamon, and nutmeg. The result is a cake-like slice with a caramelized, sticky exterior and a soft, spiced interior. Perfect for holiday gatherings, cozy winter evenings, or as a unique afternoon tea accompaniment, they capture the essence of rustic baking. The combination of sweet apple juice and warm spices makes this dish incredibly satisfying and nostalgic.

Ingredients

Directions

  1. Combine chopped dried apples and 4 cups of water in a saucepan. Bring to a boil and simmer until the apples are tender, about 10-15 minutes.
  2. Drain the apples, reserving the cooking liquid. You should have approximately 2 cups of liquid; if not, add enough water to reach 2 cups.
  3. In a large bowl, mix 1/4 cup of sugar with the dry baking mix. Stir in the sourdough starter until a soft dough forms.
  4. Turn the dough out onto a lightly floured surface. Knead gently just until smooth, then pat or roll into a 12x18 inch rectangle.
  5. Sprinkle the cooked, drained apples evenly over the surface of the dough.
  6. Starting from one of the short ends, tightly roll up the dough. Slice the roll into 12 equal pieces.
  7. In a large, deep skillet (oven-safe), combine the remaining 3/4 cup sugar, 1/2 cup brown sugar, cinnamon, nutmeg, butter, and the reserved 2 cups of apple liquid.
  8. Place the skillet over medium heat and bring the syrup mixture to a boil, stirring to dissolve the sugars.
  9. Gently lower the apple cake slices into the hot syrup, arranging them in a single layer.
  10. Bake in a preheated 375&# 194;°F (191ðC) oven for 35-40 minutes, or until the cakes are golden brown and the syrup is bubbly.
