Description

This vibrant tapenade offers a luxurious blend of tangy sun-dried tomatoes and nutty toasted almonds, creating a spread that is both rustic and refined. The deep umami flavor of the tomatoes pairs perfectly with the earthiness of the almonds, while black olives add a briny depth. It has a coarse, textured consistency that makes it ideal for spreading on crusty baguette slices or using as a dip for fresh vegetables. This versatile condiment is perfect for entertaining, adding a Mediterranean flair to charcuterie boards, or as a flavorful base for sandwiches. Simple to prepare yet sophisticated in taste, it brings a burst of color and flavor to any table.

Ingredients

Directions

  1. Preheat oven to 350&# 194;°F (175ðC).
  2. Spread whole almonds in a single layer on an ungreased baking sheet. Toast in the oven for 5-10 minutes, stirring once or twice, until lightly browned and fragrant. Let cool completely.
  3. Place dried tomato halves in a bowl and cover with hot water. Let stand for 15 minutes to rehydrate. Drain well and pat dry with paper towels.
  4. Place the cooled, toasted almonds in the bowl of a food processor. Pulse several times until coarsely chopped. Remove the chopped almonds and set aside in a small bowl.
  5. Add the drained tomatoes, black olives, olive oil, dried basil, lemon juice, and chopped garlic to the empty food processor bowl.
  6. Process the mixture, pulsing on and off, until it forms a almost smooth, coarse paste.
  7. Add the reserved chopped almonds to the tomato mixture. Pulse a few more times to incorporate the almonds, ensuring the texture remains slightly chunky.
  8. Taste the tapenade and season with salt if needed. Note that olives and tomatoes may already be salty.
  9. Transfer to a serving bowl. Serve with baguette slices, crackers, or raw vegetables.
  10. Store in an airtight container in the refrigerator for up to 2 weeks. Bring to room temperature before serving for best flavor.
