Ingredients

Directions

  1. Preheat your oven to 350ðF (175ðC), or prepare a campfire bed of hot coals if cooking outdoors.
  2. Line a 4-quart cast iron Dutch oven with aluminum foil for easier cleanup, or use a well-seasoned oven.
  3. Drain the canned fruit, reserving the syrup if desired, and place the fruit into the Dutch oven.
  4. Sprinkle a flavoring of your choice, such as cinnamon, almond extract, or lemon zest, over the fruit.
  5. In a small bowl, mix about half of the dry white cake mix with the fruit to coat it lightly.
  6. In a separate bowl, whisk together the remaining white cake mix and the can of sweetened condensed milk until smooth.
  7. Pour the cake batter mixture evenly over the fruit in the Dutch oven.
  8. Cover the Dutch oven with its lid. If using a campfire, place coals on the bottom and a heaping shovelful on top. If using an oven, place the uncovered or loosely covered pot inside.
  9. Bake for 45 to 60 minutes, or until the top is golden brown and a toothpick inserted into the cake layer comes out clean.
  10. Let cool for 10 minutes before serving warm. Enjoy with ice cream or whipped cream if desired.
