Ingredients

Directions

  1. Rinse the white navy beans and soak them in cold water for at least 4 hours or overnight, then drain.
  2. Place the soaked beans in a large pot, cover with fresh water, and simmer gently for 45 minutes until tender but not mushy.
  3. Meanwhile, cut the slab of bacon into small lardons and render them in a large oven-safe casserole dish over medium heat until crisp.
  4. Add the cubed duck meat to the casserole dish with the bacon and brown lightly on all sides.
  5. Drain the cooked beans and add them to the casserole dish, mixing gently with the duck and bacon.
  6. Season generously with salt, pepper, and herbs de Provence if available, then add enough broth or water to just cover the beans.
  7. Cover the dish and bake in a 325&# 194;°F (160°C) oven for 1 hour, stirring occasionally.
  8. Uncover and bake for an additional 30-45 minutes, allowing the top to form a crispy crust and the sauce to thicken.
  9. Let the cassoulet rest for 10 minutes before serving hot.
