  1. Cut the tops off the tomatoes and scoop out the seeds and pulp, leaving a 1/2-inch thick shell to form cups.
  2. Sprinkle the inside of each tomato cup with 1/2 teaspoon of salt and place them upside down on paper towels to drain for 15 minutes.
  3. Finely chop the scooped-out tomato pulp and mix it with the finely chopped onion, drained green chiles, remaining salt, and lemon juice.
  4. Mash the ripe avocados in a separate bowl until smooth but still slightly chunky.
